The history of Carillion Wines begins with Tim’s father, John Davis, a geologist and oil exploration consultant who had an interest in wines and the terroir from which they are produced. With his knowledge and understanding of geology, soil, landscape and climate, he set about procuring and growing vineyards in locations that were optimal for particular varieties and styles of wines.

John purchased Tallavera Grove Vineyard in 1994 - the first of the 'Davis Premium Vineyards'. He went on to purchase Stonefields Vineyard in Wrattonbully, South Australia as well as Carillion in Orange. These three sites are very diverse, providing the Davis family with huge possibilities in producing their premium, award-winning wines. 

From the traditional Hunter varieties of Semillon, Chardonnay and Shiraz, to varieties that thrive in cool climate Orange, like Riesling and Pinot Noir, to the big reds of Wrattonbully - neighbour to the better-known Coonawarra region famed for its Cabernet Sauvignon and with similar soil profiles.

As well as the capacity for these 'traditional' wines, expressing their origins so beautifully in the bottle, our vineyard range gives us an array of opportunities to explore different styles and grape varieties.

Years ago we started growing Italian varietals, based on their suitability to our vineyard conditions. Growing in popularity now, we have the benefit of older vines and years of knowledge in producing wines from them. From Aglianico to Vermentino . . . and many in between! 

Our history is also in our partnerships. In 2007, Robert and Sally Molines' Bistro Molines was established at the Tallavera Grove estate, cementing the winery’s reputation as a destination of high-quality standing.

In 2018, we re-branded our premium wines to bring them together under the banner of Carillion Wines. Carillion Wines encompasses our historical vineyard-based labels: Tallavera Grove (Hunter Valley, NSW), Carillion (Orange, NSW), and Stonefields (Wrattonbully, South Australia); and our Lovable Rogue 'Italian Jobs', which showcase our Italian varietals from all of our vineyards.

We're nearing our 30th birthday, and we hope we'll be celebrating many more milestones in the future. If Tim and Cath's young sons' love of the vineyards and tractors is a sign of things to come we're in very good hands!!
